BBQ Sauce

The secret’s in the sauce

A great BBQ sauce can provide you with both a base and a finish for a variety of foods.  Mainly used for grilling and smoking, we also like to use BBQ sauce on a variety of foods we cook in the oven.  This particular sauce is a Memphis/Kansas City style sauce, based on ketchup and molasses.  It’s dark brown color and thick, sweet texture make it a very versatile addition to your refrigerator.

Ingredients

  • 2 cups ketchup

  • 1/2 cup white vinegar

  • 1/2 cup molasses

  • 1 tsp seasoning salt

  • 1/2 tsp allspice

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1/2 cup brown sugar

  • 1/2 tsp cinnamon

  • 1 tsp cumin

  • 1/2 tsp black pepper

Combine all ingredients in a medium-sized pot.  Stir together well and place on the stove.  Slowly bring the mixture to a simmer, stirring constantly.  Let simmer for 20-30 minutes, stirring occasionally to keep the sauce from burning on the bottom of the pot.  Allow to cool and place into a container with a tight-sealing lit (we use mason jars).

We prefer to make this BBQ sauce in large batches and then store it in pint-sized mason jars.  Then we can have a small jar we’re using, and several jars stored in the refrigerator.  Once cooled and stored with a tight lid, this sauce will keep for many many months in the fridge.
